Primo Spaghetti is elegantly spun into delicate nests resembling hockey nets, each cradling a perfectly seasoned, savoury meat "puck." This creative twist features a roasted tomato sauce bursting with the rich flavours of caramelized cherry tomatoes, garlic, shallots, and grated parmigiana Reggiano. Topping each savoury puck is a golden, crispy Parmesan chip, adding a visually striking and delicious crunch. Finished with fresh basil.
Ingredients:
• 1 package Primo Spaghetti
• Fresh basil leaves, for garnish
• Freshly grated Parmesan cheese, for serving
Meat "Pucks":
• 1 lb lean ground beef
• 1/2 cup breadcrumbs
• 1/4 cup grated Parmesan cheese
• 1 egg, lightly beaten
• 2 cloves garlic, minced
• Salt and freshly ground pepper
• 1 tbsp olive oil
Roasted Tomato Sauce:
• 2 lbs cherry tomatoes
• 3 garlic cloves, peeled
• 2 shallots, quartered
• 1/4 cup olive oil
• Salt and freshly ground pepper
• 1/4 cup freshly grated Parmesan cheese
Parmesan Chip Garnish:
• Crispy Parmesan Chips
• 1 cup freshly grated Parmesan cheese
• Black pepper, freshly cracked
Instructions:
Step 1: Prepare Roasted Tomato Sauce
Preheat oven to 400°F (200°C).
On a baking sheet, toss cherry tomatoes, garlic, and shallots with olive oil. Season with salt and pepper.
Roast for 25-30 minutes until tomatoes are blistered and aromatic.
Cool slightly, then blend until smooth. Stir in Parmesan cheese, adjust seasoning, and set aside.
Step 2: Make Crispy Parmesan Chips
Line a baking sheet with parchment paper. Drop tablespoon-sized mounds of grated Parmesan onto the paper, spreading them into small rounds. Sprinkle lightly with cracked black pepper.
Bake at 400°F for 5-7 minutes, until golden and crispy. Let cool completely.
Step 3: Prepare Meat "Pucks"
Mix ground beef, breadcrumbs, Parmesan cheese, egg, garlic, salt, and pepper.
Form into flat, round "puck-shaped" meatballs, approximately 1-inch thick.
Heat olive oil in a skillet over medium heat. Cook meat "pucks" 4-5 minutes per side until browned and fully cooked. Set aside.
Step 4: Cook Primo Pasta
Cook Primo Spaghetti according to package instructions until al dente.
Drain pasta and toss lightly with roasted tomato sauce, reserving extra sauce for plating.
Step 5: Assemble "Puck in the Net"
Use a fork to twirl portions of spaghetti into nests on serving plates, forming "nets."
Nestle a meat "puck" gently into each pasta nest.
Top each "puck" with a Crispy Parmesan Chip, creating a striking visual and crunchy element.
Garnish with fresh basil leaves and a sprinkle of grated Parmesan.
Step 6: Serve
Serve immediately with additional roasted tomato sauce on the side.
